7 Minute Vegetable Soup

Ingredients 7 Minute Vegetable Soup
  • 1 cup onions, chopped
  • 2 teaspoons garlic, chopped
  • 16 ounces tomato sauce, no added salt
  • 115 ounces Stewed Tomatoes-Italian Recipe-Cnd DLM
  • 2 cups frozen mixed vegetables, 10-oz package
  • 1 teaspoon basil, dried

Preparation
  1. Preheat the oven to 350°F
  2. Spray a medium saucepan or large non-stick skillet with cooking spray and place over medium high heat. Add onion and sauté briefly. Add garlic and sauté until onion and garlic are golden brown.
  3. Add tomato sauce and tomatoes; chop tomatoes coarsely with a spatula. Add vegetables. Season with basil. Heat until vegetables are cooked through.
  4. This soup may also be made in the microwave. If the soup is too thick for your taste, slowly add a few tablespoons of water until desired consistency is reached. slowly Serve with whole grain bread or rolls.
